Strawberry Yoghurt & Banana Muffins March 23, 2009

Ingredients:
1 cup wholemeal SR flour
1 1/2 cups white SR flour
2 tb Fructose
1 1/4 to 1 1/2 cup strawberry yoghurt
1/4 cup rolled oats
1 egg
2 ripe bananas

Method:
Mash bananas, mix all the ingredients together, and pour into muffin pans (This makes about 24 muffins). Bake at 180 for about 20 mins.

Banana and Cinnamon cake January 4, 2009

Ingredients:
Packet cake mix (Vanilla or butter cake) or basic cake recipe
2-3 Bananas (depending on size) – must be overripe
1 teaspoon Cinnamon
and whatever ingredients the cake mix requires (usually 1 egg and milk)
Icing sugar to decorate

 
Method:
1). mash the bananas well.
2). Make cakemix as the packet says.
3). Add the bananas to the mix, and add cinnamon. Beat well. Then let stand for a minute to release some air.
4). Pour into greased/lined cake tin.
5). Bake according to packet mix. When browned and cooked, remove from tin and dust with icing sugar

 

Banana Bread January 4, 2009

Ingredients:
6 ripe bananas mashed
1/2 cup of sugar
1 tsp vanilla extract
1 cup of plain flour
1 cup wholemeal plain flour
1 tsp baking soda
1 tsp baking powder
as much cinnamon as you want

 
Method:
Mix all the dry ingredients together, then add banana and vanilla, mixing well. Transfer to a loaf tin and cook at 180 for 40-50 minutes.

Banana & Walnut Bread November 15, 2008

Ingredients:
3 ripe bananas, mashed
2 eggs, beaten
1/3c brown sugar
2c wholemeal Self Raising flour
1/2c chopped walnuts

 
Method:
Mix bananas, eggs and sugar. Add flour and walnuts, then spoon into a lined 10×20cm loaf tin and bake in at 180°C for 50-60 minutes or until a skewer comes out clean.

 

Banana “Icecream” November 15, 2008

Cut bananas into chunks and blend in a food processor until smooth. Put in a freezer-proof container and freeze until just frozen. Remove from the container and blend again to make a creamy frozen icecream-like consistency. Serve straight away, or freeze to serve later. Experiment with adding strawberries and other flavours. You could add 1tb honey and 1/4 tsp cinnamon to 4 bananas worth, or add a handful of berries.

Here is one I made by making the banana icecream, then splitting it into 2 batches, in one I added a handful of frozen blueberries, and the other I added a handful of frozen raspberries, then I poured them both into the one container and swirled them together.

Banana On A Stick
Peel bananas and coat with a little orange juice. Stick a skewer into the banana as a stick and freeze for 20 mins. You can roll the bananas in crushed rice bubbles, nuts, sprinkles or coconut before freezing.

 

Dairy Free Icecream November 15, 2008

The recipe I’ve seen is for using banana, but you could use any fruit.

 
Ingredients:
1 tin light coconut milk
1 banana
lemon juice and/or orange/lime
1 to 2 tablespoons of honey or other sweetener

 
Instructions:
1. Mash banana, mix in the sweetener, a squeeze of citrus of your choice and the coconut milk and stir well.
2. Pour into a freezer safe container (flat will freeze quicker), and freeze until frozen.

 
You could use other soft fruits such as mango instead of banana.

 
If you allow the mixture to just about freeze, then mash it well, then return to the freezer it makes the icecream softer as it breaks up the ice crystals.
