Rice crumbs (optional)
Herbs and spices (try garlic powder, pepper, salt, cardamon, curry, nutmeg, mixed herbs etc.)
Combine the flour, rice crumbs and spices together in a freezer bag. You won’t be able to reuse this once you’ve put the chicken into it, so depending on how much chicken you are coating, you’ll need around 1 cup of flour, 1/4 cup rice crumbs and about 1-2 tablespoons combined seasoning. You can make the mixture up and use part of it at a time for coating.
Cut chicken into cubes or strips and put into the bag of coating mix and shake it around to coat it. Shake off excess coating and shallow fry in a pan of oil until brown and crispy. Turn to make sure all sides are cooked.
