Spicy Tomato Sauce December 13, 2008

(makes 2 cups worth)

1 onion (chopped)
2 ts chilli (chopped)
1 clove garlic (chopped finely or crushed)
1 red capsicum (seeded & chopped)
8 large tomatoes (peeled, & chopped)
(or use 2x425g cans of tomatoes)
Seasonings (to taste)

Lightly fry onion, chilli, capsicum and garlic until soft. Add tomato and bring to the boil. Reduce heat and simmer for 20 minutes, stirring occasionally. When the sauce has thickened remove from the heat and store in airtight container.
