Brown Rice Salad March 22, 2009

Ingredients:
Brown rice
mayonaise
peas, corn, grated carrot
spring onions, finely chopped (optional)
Finely chopped parsley & a small amount of mint (optional)
Celery, finely chopped (optional)

Method:
1). Put the rice on to boil.
2). When cooked, drain and rinse with cold tap water. Put this in a mixing bowl.
3). Add about 3 tablespoons of mayonaise, with all the ingredients. Mix this all together.

Mint & Curry Pasta Salad December 13, 2008

Ingredients:
Pasta (I like spirals or tubes) – about 1 and a half to 2 cups
mayonaise
mint (fresh)
Natural yoghurt
curry powder
peas
corn
milk

Method:
1). Put the Pasta on to boil. Add the peas and corn to this to cook them.
2). When cooked, drain and rinse with cold tap water. Put this in a mixing bowl.
3). Add about 3 tablespoons of mayonaise, about 1/4 teaspoon of curry powder, about a tablespoon or 2 of yoghurt and about 1/4 teaspoon of mint. Mix this all together with a bit of milk (if you find you need it to make it moist enough). Adjust the quantities to taste.
4). Put in an attractive serving bowl and garnish with parsley or something

 

Rice Salad

Ingredients:

red capsicum (pepper), finely chopped
green capsicum (pepper), finely chopped
Celery, finely chopped
Cracked pepper

 
Method:
1). Put the rice on to boil. Add the peas and corn to this to cook them.

3). Add about 3 tablespoons of mayonaise, with all the ingredients. Mix this all together with a bit of milk (if you find you need it to make it moist enough). Adjust the quantities to taste.

 
I guess you could also add grated carrot too

 

Creamy Potato Salad (with bacon & egg)

Ingredients:
Baby Potatoes
Chives
cracked Pepper
Light sour cream
1 tsp wholegrain mustard
1 egg
lots of bacon
Bottled Potato salad dressing (Kraft)

Method:
1). Cook the potatoes like you would for potato salad (chopped into bite sized pieces, I like to leave the skin on)
2). Chop and fry the bacon. Boil and chop the egg
3). When potatoes are cool, add a mix of the other ingredients (just mixed to taste).  Use about half and half with the dressing and sour cream as the dressing.

 

Colourful Coleslaw

Ingredients:
1/4 Red/Purple Cabbage, finely shredded
1/4 Green Cabbage, finely shredded
4 large Carrots, grated
4 Spring Onions, finely sliced
Celery, finely sliced
Mayonnaise

Method:
Mix together (about equal parts cabbages and carrot) with as much mayo as you like.

The purple cabbage makes a really nice looking touch.

 

Pasta Salad

Ingredients:
2 cups uncooked Pasta (I like penne)
2 tb Mayonnaise
1 Carrot, finely grated
1/4 cup Corn
1/4 cup peas
1 tsp Wholegrain mustard
2 tb Low fat cream
2 tb finely chopped Spring onions
1/2 tsp Cracked pepper

 

Method:
1). Boil pasta until it’s ready, drain
2). Peel and grate carrot, add to pasta.
3). Add the other ingredients.

 

Tuna Rice Salad December 12, 2008

Ingredients:
1cup rice (cooked)
2 carrots (grated)
1/2 cup sweet corn
4 heaped tablespoons whole egg mayonaise

 
Method:
Mix ingredients together, chill and serve.
