Strawberry Yoghurt & Banana Muffins March 23, 2009

1 cup wholemeal SR flour
1 1/2 cups white SR flour
2 tb Fructose
1 1/4 to 1 1/2 cup strawberry yoghurt
1/4 cup rolled oats
1 egg
2 ripe bananas

Mash bananas, mix all the ingredients together, and pour into muffin pans (This makes about 24 muffins). Bake at 180 for about 20 mins.

Fozen Yoghurt Icecream November 16, 2008

Tub of your favourite yoghurt
Icypole moulds or plastic cups & icypole sticks. if you want to make individual icecreams.

Spread the yoghurt out in a freezer-safe container and place in the freezer until just beginning to freeze. Remove and mash to break up the ice crystals, then scoop into icypole moulds and return to the freezer.

You could mix the yoghurt with fruit to make fruity yoghurt icypoles, or do layers of both kinds.

This makes a dessert that can be low fat and low calorie. So almost guilt free! (Mum found this idea in a diabetes cookbook)

Mix equal parts of almost set jelly (made as the instructions on the pack say) and yoghurt, refrigerate until set.

Use low fat/calorie versions if you like, or you can make your own jelly by mixing gelatine with fruitjuice.

This will make a pudding-like dessert. If wanting to make this in a jelly mould, add 2tb gelatine extra when making the jelly to make a firmer dessert. Experiment with different coloured layers. You could even do a layer of plain jelly, then a flummery layer, then another jelly layer.
